How much water do you drink in a day? I’m currently in a module for my Nutritional Therapy program that is all about the HUGE importance of hydration. I’ve been drinking the right amount of water for my own body ever since I started reading more about the importance of it, and I’ve been going to the bathroom quite a bit lately. Body is still adjusting 😉 I need to write you guys a lifestyle post about hydration, because whew-wee I’ve been learning a lot and I would love to share the knowledge.
Guys, I ripped my pants. I came back to work this week after taking some time off for the holidays, and of course hadn’t worn my work uniform for a while. So I’m putting my work jeans on, which were tight from being dried in the dryer, so I did a little squat. Just a small, little, innocent squat…. They ripped from my crotch halfway down my left thigh. Great way to start my first day back! No, I haven’t randomly gained 10 pounds and busted out of my pants, and no I haven’t PR’d my squat max. Probably 5 coworkers asked me those questions today.
I ended up wearing skinny jeans instead because that was the only other option in my closet, which ended up looking pretty ridiculous with my non slip shoes. Jokes all around today.
I’m actually writing this blog post at the bar of Founding Farmers right before my shift in normal people clothes. It feels weird. I feel like a teacher who ran into their students on a weekend and am having that real world vs. work world collaboration.
Two guys at the bar next to me are eating a giant stack of pancakes right now! Definitely not paleo like this recipe, but hey you get what you can. I would LOVE if there was a restaurant in this area that was straight up paleo though, ah man. Anyone wanna start one with me in the DC area?! Just kidding I’m moving to colorado in 7 months. WAHOO!!! Maybe we can all open one together in Colorado! I’m sure we’d be much more successful in CO than DC anyway. Who’s with me?!
- 4 Eggs
- 2 Medium bananas
- 1 1/2 Cup almond meal
- 1Tsp vanilla
- Pinch of salt
- 2 Tbsp coconut oil
- Extra banana slices & maple syrup for topping
- In a food processor or blender, combine eggs, bananas, and vanilla. Blend until smooth.
- In a separate mixing bowl, add salt and almond meal.
- Pour the Banana mixture into the mixing bowl with the almond meal & salt and whisk until well combined.
- Heat a pan over medium-high heat and melt 1 tbsp coconut oil in the pan.
- Pour batter to make 3″ diameter circles. cook for amount 1-2 minutes on each side.
- Top with banana slices and pure maple syrup!
- Makes about 9 pancakes
