Happy Monday y’all! And a happy snow day to you lucky people on the east coast. I’m pretty sure 95% of people on the east coast hate snow, and maybe you’re part of the 95%, but I am SO dang excited to have a real winter this year! Snow days at our house mean sleeping in, breakfast in bed while watching too many episodes of How I Met Your Mother, laundry, and catching up on tons of work. My NTP written midterm and practical are creeping up in just 2.5 short weeks, so it’s pedal to the metal time, baby!
I’m sitting here looking at my huge 40 oz. water bottle, and just reminded myself that I’ve been meaning to write you guys a post about hydration. If all goes well, I’m hoping to have that out on Wednesday this week, so stay tuned! I’ll be talking about how much water you should drink in a day, how to help balance your electrolyte levels, the many ways water functions in the body, and signs of chronic dehydration due to years of consuming (unintentionally) insufficient amounts of water. It’ll be a good one!
How was your Valentines Day yesterday? Did you make my Chocolate Chip Paleo Cookies?! If not, you should make them today, because #Monday. We made them yesterday and ate every single one of them in one sitting… They were split between four people though, so I guess that’s not too bad 😉
This new Bacon Braised Rainbow Chard recipe has been a staple at our house in varying forms. The bacon throws in that nice smokey flavor that makes those greens taste like home. It’s a deliciously comforting dish, perfect for this snowy cold weather! Enjoy 🙂
- 1 Cup [url href=”http://www.grasslandbeef.com/Detail.bok?no=580&affId=204749″]nitrate free bacon[/url], cut into 1″ pieces
- 1/2 Red onion, diced
- 1/2 Tbsp [url href=”https://www.amazon.com/gp/product/B000WS3AJ8/ref=as_li_tl?ie=UTF8&tag=whatcaitate-20&camp=1789&creative=9325&linkCode=as2&creativeASIN=B000WS3AJ8&linkId=2f30d7dd3ae8bb8be37cc548f948bf6a”]crushed red pepper[/url]
- 3 Cloves garlic, diced
- 1 Bunch of rainbow chard, chopped
- 1 Tbsp [url href=”https://www.amazon.com/gp/product/B01DQ14Z64/ref=as_li_tl?ie=UTF8&tag=whatcaitate-20&camp=1789&creative=9325&linkCode=as2&creativeASIN=B01DQ14Z64&linkId=76fe01ff293ca8cbc4f1dea2e994f0bf”]coconut aminos[/url]
- Salt & pepper for tasting
- Heat a [url href=”https://www.amazon.com/gp/product/B00006JSUA/ref=as_li_tl?ie=UTF8&tag=whatcaitate-20&camp=1789&creative=9325&linkCode=as2&creativeASIN=B00006JSUA&linkId=d234f944a9b3d9ca4282247aa5659d3e”]cast iron[/url] over medium high heat, then add[url href=”http://www.grasslandbeef.com/Detail.bok?no=580&affId=204749″]bacon[/url], onion, garlic, and crushed red pepper. Cook until bacon is nice and crispy, about 5-8 minutes.
- Add chopped rainbow chard to the cast iron with other ingredients and mix well.
- Allow chard to wilt a little, about 1-2 minutes, then add [url href=”https://www.amazon.com/gp/product/B01DQ14Z64/ref=as_li_tl?ie=UTF8&tag=whatcaitate-20&camp=1789&creative=9325&linkCode=as2&creativeASIN=B01DQ14Z64&linkId=76fe01ff293ca8cbc4f1dea2e994f0bf”]coconut aminos[/url] and a pinch or two of salt and pepper.
