I climbed outside on REAL ROCKS yesterday for the first time with a group of friends and it was AHHmazing! I can’t believe its taken me this long to actually get onto legit rocks and away from indoor climbing. It was lit, for real. Bucket list item checked off.
One of my fiancé’s best friends from high school lives in Denver, and the other one just arrived yesterday to spend a few days with us before heading to a family wedding. These three dudes are the definition of a “bromance”. They’re the freaking bomb and I’m so hype to spend time with all of them! I don’t know if it’s because I grew up super close with my older brother, but I freaking love hanging with the guys. Always a blast and I find myself laughing non-stop.
After climbing yesterday we hit up a local park to toss around some frisbee before making dinner. The parks in Denver are AMAZING but there are some whacko people that show up. There was some random dude walking around with an enclosed baby stroller, blasting EDM music and doing some weird dance moves. I really don’t even know if they were dance moves, but he was gettin’ it! We were all convinced he was probably on something, and came to the conclusion that there was probably no baby in the stroller, just some big ass Bose speaker. Gotta love Denver!
Do you ever have those nights where you have plans to go out, get all showered and ready, but then everyone just gets kinda drunk and you end up staying in but have a freaking blast anyway? Last night was one of those nights. (Yes, on a Wednesday). We were planning on going to a comedy club for open mic night, but ended up staying at our apartment and drinking whiskey all night. Well, the guys did. I drank GT’s alcoholic Third Eye Chai kombucha… HOLY YUM! If you guys haven’t tried this stuff, go get your hands on some because its SO damn good. Best booch EVER. Anyway, last night consisted of making hella good food and watching the dudes make total heathens out of themselves non-stop. It was great.
Since it’s squash season and I’m now living off of them because they’re so cheap and delicious, I made this insanely yummy Maple Cinnamon Acorn Squash earlier this week. - Preheat oven to 375 and prep a baking sheet with parchment paper.
- Cut squash in half & scoop out the seeds. - Use a spatula to wipe down the sides and make sure everything is mixed evenly. Turn up to level 2-3 until completely blended.
