Simplifying the complex world of functional nutrition

Woke up this morning feeling like a million in singles at 5:30am (wtf?) and had a kick ass leg workout at our favorite climbing gym here in Denver. If you’re in the Denver area, you’re SERIOUSLY missing out if you haven’t been to Movement Climbing yet! It’s a ridiculously badass gym: huge bouldering area, 3-story top rope and lead rope walls, Crossfit style workout classes, bootcamp classes, cycling, yoga, treadmills, free weights, stretching area, climbing classes… literally HEAVEN. BONUS: they bump 90’s music and other cool jams like Thievery Corp. + Pretty Lights.

So we get back from our workout and I’m HYPE AF.. like I don’t know what the hell got into me because I’m usually a rock in the morning. So I’m running around singing, dancing and talking in weird ass voices to my fiancé (typical) and then I realized I REALLY wanted french toast for breakfast. I wanted it so bad I think I actually smelled it for a second when I thought about it.

This french toast, trust me when I tell you this, is seriously the french toast of all french toasts. It’s gluten free, loaded with protein + collagen for healing all these broken tummies we’ve got thanks to our stressful lives, shitty food system, and horrible nutrition dogma that has been preached to us for years. Now, I’m not saying this french toast will heal your gut.. but the freaking delicious, gut healing Vanilla Collagen from Vital Proteins in this recipe will knock your socks off and is jam-packed with collagen which is known to heal + seal the intestinal lining. LEGEN- wait for it- DARY! In all seriousness, this Vanilla Collagen is stupid delicious and adds a whole new spin on everything you ever wanted to mix your collagen peptides into. It’s made with collagen, probiotics (SCORE!), coconut water, and Madagascar bourbon vanilla.. YEP it’s that good. Simple, REAL ingredients. It doesn’t get much better than that!

Gluten Free Vanilla French Toast

Serves: 2 servings
  • French Toast:
  • 6 Slices GF Bread ( I used [url href=”″]Canyon Bakehouse[/url])
  • 3 Whole Eggs
  • [url href=””]1 Scoop Vital Proteins Vanilla Collagen[/url]
  • 1 Tsp Cinnamon
  • Pinch of [url href=””]Redmond Real salt[/url]
  • Vanilla Yogurt Frosting:
  • 1/3 Cup Plain Yogurt ( I used Siggi’s)
  • [url href=””]1/2 Scoop Vital Proteins Vanilla Collagen[/url]
  • 1 Tsp Raw Honey
  • Dash of cinnamon
  • For Cooking + Topping:
  • 1-2 Tbsp [url href=””]Grass-fed Butter[/url] to grease the pan
  • Pure Maple Syrup to drizzle on top
French Toast:
  1. Heat a large pan over medium-high heat.
  2. While the pan is heating, whisk the eggs, [url href=””]Vital Proteins vanilla collagen[/url], salt, and cinnamon together in a pie plate until well combined. ( The pie plate makes it easy to egg-wash the bread).
  3. Place 1-2 pieces of bread into the egg wash in the pie plate and let each side soak for about 30 seconds. You want the bread to be totally covered with the egg wash!
  4. Add 1/2-1 Tbsp butter into the hot pan and spread around until the pan is covered, then place the egg-washed bread into the pan.
  5. Cook until nicely browned, about 1 minute on each side.
  6. Plate your french toast, then add the Vanilla Yogurt Frosting + maple syrup on top!
Vanilla Yogurt Frosting:
  1. In a small bowl, mix together the yogurt, [url href=””]Vital Proteins vanilla collagen[/url], cinnamon and honey.
  2. Add to the top of your french toast along with a touch of pure maple syrup and enjoy!
