Happy Friday!!! Ahhh, we finally made it to the end of the week! Who’s got plans for a fun weekend ahead?? Little outdoor BBQ action for anyone? Hopefully the weather is nice! I have no idea what the heck I’m doing this weekend… I don’t even know what I’m doing today! Actually, I’m going toCrossfit and out to lunch with some badass chicks I haven’t seen for a while at Crossfit Verity. But dang! Life post college.. phew what a time! Straight up roller coaster of emotion and confusion that’s for sure. I always thought graduating college would feel like going to college: not sure what the future holds but you’ve got an outlined idea and you feel super ready for it. Yea, graduating feels like a thousand emotions at once, all the while having no freaking clue what the heck you’re doing with your life. On the other hand though, theres SO much to be grateful for! I’ve got a degree, loving family and friends, a roof over my head, FOOD, a few jobs, and of course God. Not much else I could need! Life is good.

Speaking of food, I’m running low on just about everything and need to go to the store, like yesterday. The funny thing, though, is that I have plenty of meat to cook, my fridge and freezer are stocked with meat and seafood that need to be eaten, but I don’t have veggies or anything else to actually make a meal with. Stu and I usually compile our groceries to make meals together and call it even, but last night we didn’t have enough food between the two of us to make anything.

So we did what we usually do when we run out of food and don’t feel like cooking- Chipotle. I freakin love chipotle! Not just because its hyped up to be this big amazing grab and go restaurant where people shove their faces with tons of food – thats definitely one reason though- but i love Chipotle because they’re dedicated to quality, non-GMO, pasture raised and sustainably sourced foods. And they’re a huge chain! First big chain restaurant in the US to require quality foods and demand it from their sources. Its awesome to see that we can change the scope of our food industry, we just have to demand better.

My order at chipotle is usually a burrito bowl with white rice, black beans, tons of sautéed veggies, chicken or barbacoa, medium salsa, sometimes cheese, and ALWAYS GUAC. Totally not paleo bro, but it keeps my tummy happy so I indulge every once and a while.

Guys, Stu is literally always hungry.. so of he course wanted to make more food when we got back home from Chipotle. Let me just take a moment to say what a struggle it is to not gain a thousand pounds being his girlfriend because the man eats non stop. You think I’m kidding! The dude runs upwards of 90-100+ miles PER WEEK during cross country season (which he is training for right now) so you can imagine the appetite this guy has. Its seriously incredible. He has to be eating around 3,000-4,000 calories a day, easily. I have to stop myself from eating all day with him, and sometimes I cave because his snacks are just too good.

Anyhow! We got home and had quite the sweet tooth, so we made some healthy Cinnamon Peach Coconut Smoothies that were SO SO SO GOOD:

Cinnamon Peach Coconut Smoothie

Serves: 2
Ingredients
  • 3 Cups organic frozen peaches
  • 1 Cup Fage greek yogurt
  • 2.5-3 Cups unsweetened coconut milk
  • 1 tsp Cinnamon
  • 1 tsp Organic vanilla extract
  • Unsweetened shredded coconut ( I suggest Lets Do Organic)
  • Extra cinnamon for garnish
Instructions
  1. Get out your handy dandy Vitamix, or blender.
  2. Toss in your peaches, yogurt, coconut milk, cinnamon, and vanilla.
  3. Blend until well mixed with no clumps. If smoothie is too thick, add some more coconut milk to lighten it up.
  4. Pour into glasses & top with shredded coconut and extra cinnamon.
  5. Eat/drink non-stop until it’s all gone (that’s what I did, ha!)

    Enjoyed reading your comments about post college. It was a very very long time ago for me; I wish I could have articulated my feelings back then the way I can today and how you just did. Sounds like you have some great support and guidance from God. You will figure it out. I’ll try this smoothie for breakfast tomorrow! BTW I work with Stu, lovely addition to the team.
